Coffee description

Stellita is Yellow Honey processed Castillo Rosario Varietal with a combination of anaerobic and aerobic fermentation and it comes from a Microlot at an altitude of 6,233 feet above sea level (1,900 meters) in Finca La Vega in Amaga, Antioquia, Colombia. With honey process the coffee cherry is pulped and dried with the mucilage layer intact. This process gets its name from the sticky, honey-like feel of the mucilage. A yellow honey processed bean, approximately 25% mucilage, generally has the least coverage during drying and will turn yellow.

Yolima and her mother, Stella, are worthy representatives of the Paisa people. The story of their wonderful coffee is the story of Yolima, her mother, and her father. It is the story of Yolima’s self improvement. It’s the story of following her parent’s example with hard work and determination. It is the story of a Colombian family raised in love, respect, values and effort.
