INFUSED CHOCOLATE MOCHA CAKE

INGREDIENTS: 

FOR THE CAKE:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup strong Clarena’s Coffee, cooled

COFFEE INFUSED GANACHE:

  • 1 cup heavy cream
  • 1 1/2 cups semisweet chocolate chips
  • 2 tablespoons Clarena’s Coffee, brewed and cooled

COFFEE WHIPPED CREAM:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant coffee granules
  • Chocolate shavings (optional, for garnish)

 

INSTRUCTIONS:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, beat the eggs and then add in the buttermilk, vegetable oil, and vanilla extract. Mix well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gradually add the strong Clarena’s Coffee and mix until smooth. The batter will be thin.
  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
  • In a saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and stir in the chocolate chips and brewed Clarena’s Coffee until smooth. Allow the ganache to cool to room temperature.
  • Once the cakes are completely cooled, spread a layer of ganache on top of one of them. Place the second cake on top and cover the entire cake with the remaining ganache.
  • Whip the heavy cream, powdered sugar, and instant coffee until stiff peaks form. Spread the whipped cream on top of the cake.
  • Slice and enjoy!
