Coffee description

Stellita is a microlot coffee—from a specific location on a farm—and grown at an altitude of 1,800-1,900 meters (5,905 - 6,233 feet). The coffee is Castillo Rosario. Castillo varieties were originally bred to preserve regional distinctions. It is Yellow Honey processed with a combination of anaerobic and aerobic fermentation. With honey processing, the coffee cherry is pulped and then dried with the mucilage layer intact. This process gets its name from its sticky, honey-like feel of the mucilage. A yellow honey processed bean, about 25% mucilage, typically has the least cover during drying and will gain a yellow color.
